A claim for the GKR Sumcheck protocol

Specifically the claim is that for

• an $n$-variate polynomial $f$,
• a random vector $r$, called the GKR challenge,
• a claimed sum $s$,

that $\sum_{x \in {0, 1}^n} f(x) * \mathsf{eq}(x, r) = s$. where $\mathsf{eq}(x, y) = \prod_{i=0}^{n-1} x_i y_i + (1-x_i)(1-y_i)$ is the multilinear extension of the equality indicator partially evaluated at $r$.
